Glazed Lemon Brownies

Zingy, tangy, lemony, deliciousness in a brownie - or maybe that should be a lemonie?!



So easy to make.

Here's what you need:

(Makes 12)

  • 100g plain flour
  • 150g caster sugar
  • 115g butter
  • 1/4 tsp salt
  • 2 eggs
  • zest of 4 lemons - reserve a small amount for the glaze
  • 2 tbsps lemon juice


Beat the butter and sugar together.

Add the eggs and mix well.

Mix in the flour, salt, zest and lemon juice.

Pour this mixture into a lined brownie tin - approx 8"x10" - and bake at 170c for 20-25 minutes until lightly golden.

Allow to cool for a few minutes in the tin then transfer to a cooling tray.

For the glaze you will need:

  • 150g icing sugar
  • zest
  • lemon juice - approx. 3 tbsps


Beat the icing sugar and zest with a little juice at a time until you get a spreadable consistency for your glaze.

Then just spread it on.

Let it set, cut into chunks and enjoy!
